Chia Seed Pudding

This pudding is an excellent option for an instant breakfast, a snack attack, or a sweet tooth fix. It is healthy and delicious even for picky eaters, easy and inexpensive to make, and impressive to share with friends and family.
Chia seeds are one of the healthiest foods on the planet. They are native to Mexico and Guatemala, but today they are grown in other parts of South America and the United States. These tiny seeds are nutritional powerhouses, known primarily for supplying essential fatty acids (omega-3, ALA, omega-6), fiber, and protein. One of the best ways to use them is to make tasty puddings because chia has the ability to expand in the liquids and create semi-solid consistency. The recipe below has a chocolate flavor, but many other flavors can be used to make this delicious concoction. Please check out coconut blueberry and raspberry chia jam.
Ingredients:
1 cup of almond milk (click here for homemade almond milk recipe) or any milk of choice
3 Tablespoons chia seeds
1 large date, finely chopped
1 Tablespoon raw cocoa
½ teaspoon vanilla
For the topping: fresh fruit, nuts, cocoa nibs, shredded coconut (optional)
Instructions:
Pour milk into a jar with a tight lid (the best size is about 1.5 cup to fit all ingredients)
Add chopped date, cocoa, and vanilla. Close the jar tightly and shake the jar vigorously several times.
Add chia seeds, close the jar, and shake it again for about 30 seconds. Leave it for a couple of minutes and shake again. Repeat this process a few times until all ingredients are well combined, and the consistency starts getting less runny.
Put the jar in the fridge and wait for at least half an hour before serving to allow the pudding to get thick and cold.
Serve chilled topped with fruit (raspberries, strawberries, bananas), cocoa nibs, or shredded coconut.
Chia pudding can stay fresh in a closed jar for 3-4 days in the refrigerator. It travels “well”, and it is a great option to keep in the cooler during road trips.
