Summer Salad with Cucumbers, Tomatoes, and Radishes

Perfect for a light lunch with a slice of sourdough bread or dinner with grilled salmon or roasted chicken and a great option for a summer potluck.
Ingredients:
· ½ cup mayonnaise (or vegenaise)
· 2 tablespoon EVOO (extra virgin olive oil)
· 1 tablespoon lemon juice
· ½ feta cheese, crumbled
· 1 bunch fresh dill, chopped
· 1 bunch scallions, green parts only, chopped
· 1 large English cucumber, chopped
· 1 pint cherry tomatoes, quartered
· 1 bunch small radishes, chopped
· Salt and pepper to taste
Method:
Whisk mayonnaise, olive oil, lemon juice, salt and pepper in a small bowl. Place chopped vegetables (including green onions) in a large bowl, add the dressing, and mix to coat the vegetables. Add feta cheese and dill and gently mix it again. Serve cold.
