If you are feeling depleted, fighting an infection, healing your gut, trying to get lighter, or gently detoxify your body, this super-nutritious soup with only five ingredients might be the answer.

This healthy and easy to make recipe is based on a popular green tonic recipe called Bieler Broth. Dr. Henry Bieler, MD, is recognized and respected as a pioneer or alternative medicine and an author of a bestselling book, “Food is Your Best Medicine”, published in 1965. Bieler’s Broth is still recommended as a part of detox, healing, and recovery programs by many holistic health practitioners. The combination of vegetables in this recipe provides the optimal ratio of sodium and potassium essential for our bodies’ metabolic processes, helps to create an alkaline environment in the blood for healing, and delivers easily digestible fiber and other vital nutrients for detoxification.

The Green Soup tastes just fine, but it might be a bit bland to take it to your St. Patrick’s potluck party (unless you live in Boulder, Colorado!). Adding lemon juice, garlic, ginger, olive oil, ghee, hemp seeds, or avocado will make the soup taste more appealing and add nutritional value (I recommend not adding any fat if you are using this soup soup as a part of the detox protocol).

 

Ingredients:

  • 1.5 cup of filtered water

  • 2 stalks of celery

  • 1 cup of green beans

  • 1 medium zucchini

  • ½ bunch of Italian parsley

  • Sea or Himalayan salt to taste

  • Optional: garlic, 1 tsp. of ghee, 1Tbs of olive oil, fresh lemon juice (to taste), or chunks of avocado.

 

Method:

Bring water to boil.  Add salt and chopped vegetables except for the parsley and optional ingredients. Simmer for about 15 minutes until the vegetables are soft but not overcooked. Take off the stove, move the veggies and the water into a blender, add parsley, and optional ingredients if using, except for avocado. Mix everything until the texture is smooth; add more water if needed. A hand blender will work as well, but the taste will feel chunkier.

 

Top the soup with avocado if using, and eat the soup hot, warm, or cool, but not cold.
