Homemade Almond Milk

Several years ago, I learned the art of making homemade plant milk when visiting Sanoviv, Functional Medicine Institute, in Mexico. I attended a cooking demo where the chef made almond milk in 5 minutes, leaving no mess to clean up. Since then, I make almond milk every few days and use it to make chia pudding, chai tea latte, and oatmeal. It is much tastier and healthier than store-bought.

Ingredients:

·      I cup whole almonds, blanched

·      3 cups filtered water

·      high speed blender

·      cotton cheese bag

Method:

Soak almonds overnight. Strain and rinse in the morning. Place the almonds and filtered water in the blender and blend it until smooth and creamy. Pour it into a cheese bag and squeeze the liquid into a bowl. Transfer the milk into a glass jar and store it in the fridge for up to 4 days.
