Peanut Butter and Apple Oatmeal Cookies

These cookies are 100 percent plant-based with no sugar added. Apple and bananas provide sweetness, and peanut butter makes them moist and slightly chewy. They are nutritious and perfect for breakfast, snacks, or guilt-free desserts. Easy to store in a cool and dry place for up to five days in a airtight container.
Ingredients:
½ cup mashed banana (1 large)
½ cup grated apple
¼ cup no-salt-added peanut butter
2 tablespoons unsweetened, unflavored plant-based milk
1 teaspoon pure vanilla extract
1 cup rolled oats
½ cup whole wheat flour (or all-purpose GF flour)
2 teaspoon ground cinnamon
¼ teaspoon baking soda
¼ teaspoon sea salt
1 cup raisins
1/2 cup walnuts (optional)
Method:
Preheat oven to 350 F and prepare two cookie sheets
Combine mashed banana, grated apple, peanut butter, milk, and vanilla.
In a separate bowl mix dry ingredients: oats, flour, cinnamon, salt, and baking soda.
Combine dry and wet ingredients. Stir in raisins and walnuts.
Drop 2-3 TBS of dough on the cookie sheet leaving about 3 inches between each drop. Use a spatula to flatten the dough slightly.
Bake for about 13-15 minutes until golden brown.
