Peanut Butter and Apple Oatmeal Cookies

These cookies are 100 percent plant-based with no sugar added. Apple and bananas provide sweetness, and peanut butter makes them moist and slightly chewy. They are nutritious and perfect for breakfast, snacks, or guilt-free desserts. Easy to store in a cool and dry place for up to five days in a airtight container.

Ingredients:

  • ½ cup mashed banana (1 large)

  • ½ cup grated apple

  • ¼ cup no-salt-added peanut butter

  • 2 tablespoons unsweetened, unflavored plant-based milk

  • 1 teaspoon pure vanilla extract

  • 1 cup rolled oats

  • ½ cup whole wheat flour (or all-purpose GF flour)

  • 2 teaspoon ground cinnamon

  • ¼ teaspoon baking soda

  • ¼ teaspoon sea salt

  • 1 cup raisins

  • 1/2 cup walnuts (optional)

Method:

  • Preheat oven to 350 F and prepare two cookie sheets

  • Combine mashed banana, grated apple, peanut butter, milk, and vanilla.

  • In a separate bowl mix dry ingredients: oats, flour, cinnamon, salt, and baking soda.

  • Combine dry and wet ingredients. Stir in raisins and walnuts.

  • Drop 2-3 TBS of dough on the cookie sheet leaving about 3 inches between each drop. Use a spatula to flatten the dough slightly.

  • Bake for about 13-15 minutes until golden brown.
