Plant-Based GF Banana Muffins with Crystallized Ginger

Ingredients:
1 ¼ cup mashed banana (3 medium)
1 cup unsweetened, unflavored plant-based milk
1/3 cup coconut oil, melted
1 tsp apple cider vinegar
TBS pure vanilla extract
1 TBS baking powder
1 tsp cinnamon
½ salt
1 ¼ cup all-purpose GF flour blend
1 cup crystalized ginger, chopped into small chips
Method:
Preheat oven to 375 F and prepare 12 muffin tins.
Combine mashed banana, milk, coconut oil, apple cider vinegar, vanilla, and maple syrup.
In a separate bowl mix dry ingredients: flour, cinnamon, salt, and baking powder.
Combine dry and wet ingredients. Stir in raisins and half a cup of chopped crystalized ginger.
Divide the dough among the tins. Sprinkle the tops with the remaining ginger .
Bake for about 25 minutes or until golden brown.
