Polish Cucumber Salad (Mizeria)

This salad is very popular during the summertime in Poland. It is often served as a side dish with dinner that consists of meat and young potatoes. The cooling and refreshing qualities of cucumbers help to make summer dinners lighter and more digestible. Here in the United States, this salad goes very well with burgers, barbecue chicken, brats, grilled fish, and shish kabob. It takes only about 10 minutes and a few ingredients to make this salad, and most people love it.
Ingredients:
1 large English cucumber or 2 other kind medium cucumbers (organic if possible)
1 Tbs. freshly squeezed lemon juice
4 Tbs. sour cream or Greek yogurt *
2 Tbs. green onions and 1Tbs. fresh dill (chopped)
Salt and pepper to taste
Method:
Make the dressing by combining sour cream, lemon juice, salt, and pepper, and set it aside.
Wash the cucumbers and peel or leave the skin on (if you choose not to peel the cucumbers, use only organic ones). Slice the cucumbers thinly and sprinkle with a little bit of salt and pepper.
Combine sliced cucumbers with the dressing until all slices are coated with the dressing. Next, add green onions and chopped dill and mix it all.
Chill the salad in the refrigerator until ready to serve. It tastes best served within a couple of hours of making it.
