Spinach Salad

Spinach is among the few leafy greens that can be grown during winter in parts of the world with moderate climates. Spinach has many nutrients that can help to boost energy levels, support the immune system, and reduce inflammation. While most salads are best served cold and quickly after mixing the greens with dressing, spinach salad tastes better at room temperature and after marinating with the dressing for several minutes or longer.

Ingredients:

  • 5 oz. fresh baby spinach

  • 1/4 cup toasted sliced almonds

  • 1/4 red onion, thinly sliced (optional)

  • 1 small apple, thinly sliced (optional)

  • 1/4 cup crumbled feta (optional)

Dressing:

  • 1/3 cup EVOO (Extra Virgin Olive Oil)

  • 3 tbsp. white balsamic vinegar

  • 1 clove garlic

  • 2 tsp. dijon mustard

  • salt and pepper to taste

Method:

  • Place in a jar all dressing ingredients. Close the jar tightly with a lid and shake it vigorously until all ingredients are incorporated.

  • Place spinach in a large bowl and toss it with dressing. Let it marinate for several minutes.

  • Add the rest of the ingredients to the salad and toss it gently. Serve immediately.
