“Express” Sweet Potato Soup

This soup is a great comfort food on cold fall and winter days. Sweet potatoes are more nutritious compare to white potatoes and lower on the glycemic index. They taste great combined with warming spices that help with digestion and circulations.
Ingredients:
· 1.5 cup bone broth or plant-based broth
· ¼ cup coconut or home made almond milk
· 1 small sweet potato (baked, steamed, or roasted)
· pinch of nutmeg
· ½ tsp. cinnamon (preferably Ceylon)
· ½ tsp. turmeric powder
· salt and pepper to taste
· 1 tsp. ghee (optional)
· 1 tsp. toasted pumpkin seeds (optional)
· 1 tbsp. chopped scallions
Method:
Place all ingredients in a blender. Turn the blender to a medium speed and let it work until all ingredients are combined and the potatoes are pureed. Warm the soup on the stove in a pot to the desired temperature. Pour into a bowl and sprinkle pumpkin seeds and scallions on top.
